Baked Oatmeal (a prep the night before recipe!)

This healthy breakfast is powered up in nutrition AND simplicity!

I found this recipe online a few weeks ago, but it didnt work quite right for us. It stayed too wet in the middle, and increased time or heat just caused the edges to over-dry without correcting the ultra-gooey center. So heres my tweaked version:

3c          rolled oats, old fashioned – not quick cook

1/3 c     sugar, or sweetener or choice

1 c         milk,  almond is GREAT in this recipe

1t          extract (vanilla, rum, etc –match your toppings)

Combine night ingredients in a bowl, cover, and leave on counter overnight!! The next morning, add in your morning ingredients, mix until blended (no mixer necessary, just a good old fashioned spoon). Put in a greased dish (this is a perfect fit for my 88 glass pan) and bake at 350° until edges are browned and bubbly.

Baked Oatmeal is a huge hit! Love these easy prepare-the-night-before recipes!

Use brown sugar for the sweetener and drizzle with maple syrup the next morning for Maple/Brown Sugar

soften chopped apples and bump up the cinnamon by an additional teaspoon for Cinnamon Apple

Mash (or chop) a banana and include in the Morning ingredients – combine with other fruits, as desired

Spoon in half and add a layer of fruit such as peaches, blueberries, cherries (real, pitted), raisins, etc… and spoon in remaining half

Nuts, Craisins, Granola, etc, the possibilities are endless for topping variations!
